Yes this would make a really good Extended Project. You could focus on the advances in special effects over the years and comment on whether this is a positive thing or not.
One suggestion is that you could use the Planet of the Apes films, using the original with Charlton Heston which used prosthetics, then Tim Burton's version which used a combination of prosthetics and CGI and then finally the most recent version, Rise of the Planet of the Apes which is CGI and motion capture.
You could find out which version of special effects people prefer and look into how quickly they date.
